One thing that has impressed James and me about the UK is the focus on sustainability. When we flew from Ireland to Edinburgh, we noticed a variety of wind farms and solar panels on the majority of buildings. As we settle into the culture, we have noticed the national effort on recycling materials. Many restaurants source locally. Vegetarian and vegan options are common in restaurants and grocers (vegetarian/vegan lifestyle is easier on our planet’s resources.) And, even though we work to recycle and lessen our impact on the planet in the US, we are impressed with how it is accepted and ‘just the way things should be’ here in Britain. Kudos to the UK! Your former colony still has much to learn.
